This coconut protein cookies recipe is modified from one of Megan Kelly’s recipes. She is a licensed Esthetician that happens to be a genuine Christian who specializes in holistic nutrition, spiritual health, and woman’s hormones. The following ingredients should produce approximately 18 cookies.

Coconut Protein Cookies Ingredients:

  • 1/2 cup of Sunflower Seeds
  • 1/4 cup of Honey
  • 2 tablespoons of Coconut Oil
  • 1/8 cup of Water
  • 1.5 cups of shredded Coconut Flakes
  • 1 Teaspoon of Vanilla
  • 1 teaspoon of Cinnamon
  • 1/2 Cup of High-Quality Protein Powder

Coconut Protein Cookies Instructions

First, you need to preheat your oven to 300 degrees F. Then, chop up the sunflower seeds until they are in chunks. You can do this by hand or in a blender. After this, you need to stir all the ingredients into a mixing bowl. If it is crumbly, adding another tablespoon of coconut oil and a little more water can help. Once receiving a good consistency, scoop out cookies and place them on a cookie tray. Flatten the cookies on the tray by pressing on them. Place in oven and bake for about 15 minutes or until golden brown.

Additional Notes:

If you do not like sunflower seeds, you can use 2 cups of coconut shreds as a replacement. You can also use any other kind of seed or nut, if you have a preference. The protein powder can be unflavored or flavored. This will allow you to choose the overall taste of your cookies. If you prefer a coconut cookie sandwich, you can use the coconut whipped cream recipe between two cookies.
